Recipe: Corn and Tomato Salad

My corn and tomato salad I bring to every gathering I can. I am posting for Tuesday and everyone who has asked me for it and I always say… ahh. I’ll have to write it down… I love it’s freshness. I am willing to cut corn off the cub for the ultimate freshness. I original came by this from the Sunset Magazine. Years and years ago… However over time I have just made it my own and don’t use a recipe. This one below is very similar to how I do it. I hope you enjoy!

First this is how I would tell you to make it.
Grab about four cobs of corn, a box of tomatoes, one red of white onion of small size,
Olive oil, red wine vinegar, get the feta cheese that has basil (why buy both), some red wine vinegar
Cut the corn off the cob without it flying everywhere.
Put the olive oil about tablespoon and the onion cut up into small pieces in a frying pan.
Let it slowly cook til its shiny and cooked through.
Keep an eye on it and keep stirring cause burnt is gross. While you’re paying attention to it. Quarter the cherry tomatoes. Because cherry tomatoes have to much skin. So more like quartering is better then half.
Then when the onion is cooked throw in the corn and let it slowly cook also stirring while you finish the tomatoes.
Once the corn is cooked through but not overcooked then throw it in the bowl with the quartered tomatoes. Toss it all together. Now do about 5-10 shakes of the red wine vinegar and toss. Then let it sit for a bit and throw the feta cheese with the basil in it on top and toss. You don’t want to put it on while its to hot or it melts. Put it in a clear or white bowl to serve because the colors really pop and the “frozen corn” sounds like a good idea, but just ruins the freshness.
And then below is a recipe similar to my thoughts about. Haha. in that I guessed at the measurements. 
I was told that “the chew” made one not to long ago that reminded folks of my salad I bring all the time. The benefits of bringing a yummy side dish is that I get to eat it because I know it’s gluten free. Woohoo.
Corn tomato salad
Ingredients:

1/2 Cup red/white onion, chopped
I containerd cherry/grape tomatoes, halved/quartered
1 Tablespoon olive oil
4 Cups fresh corn on the cob, about 4 ears
a pinch of fresh basil (or get the feta cheese with it)
2 Tablespoons sherry/red wine vinegar
 feta cheese on top afterwards. ( just get the kind with the basil and sun dried tomato in it)
How to make:
– Over medium heat, stir onions in olive oil (5-7 min) until limp
Serve within 4 hours. Let it sit at room temperature. And serve that way.
Although I have served out of the fridge the next day.  Who can pass it up.

Fixin the tie

My son  is dressing for the job fair today. He really wants one of the school positions and to be on student council next year. He came out with this outfit to wear and Dad is helping him with his tie. Although Mom redid it.  Haha. I am bringing extra clothes and waiting til the job fair ends so he can change and hit the playground. He is nervous and excited this morning and hopeful. I am proud. Very proud. Love my life.

August 2012 Grab Bag layouts

Chris and members of the More team at Visual Designs by Chris have a wonderful Grab Bag available this month for the great price of $7.00US .

As a member of Chris’s CT I have the privilege of working with her fantastic personal cutter files (KNK Zing   and Maxx, Cricut, Silhouette, etc) only I work with them digitally. This way I get to combine my digital scrap-booking work with personal cutter files which I can use digitally as well or mix up the two for hybrid projects. In this instance I took all of the files Chris sent me and used them digitally on my pages. I add textures and styles to the cutter files to give them added dimension, and they work perfectly.

These files are all in this months Grab Bag, so don’t miss it! These are just a small sampling of the files the Bag contains. Plus, there is an Early Bird file available for quick purchases, but only for a short time.

Firstly I used CD00934 – Autumn. My favourite time of the year. The Word Art is actually a personal cutter file that I have added textures and styles to. I created this layout in Photoshop CS5.

Second layout uses CD00935-Happy Halloween. In this layout the title “Happy Halloween”, the Witch and the Moon are the personal cutter files. Once again I have played with them in PSCS5 and this is the result.

My third layout uses CD00936 – Got Mud. The title and the ATV Quad bike are the personal cutter files in this layout. As we don’t have a quad bike, the pictures for this layout came from the internet.

My last layout uses CD00938 – Fish Fish. My hubby and my eldest love fishing, actually the youngest likes fishing too, it just isn’t always practical to take him along for a day long trip. The “chipboard” boy holding his catch and the title are the personal cutter files on this layout. They look great don’t they!

As you can see, personal cutter file description doesn’t preclude you from using your files digitally if you wish. Sometimes, you just want to put a layout together quickly and not have to get out the card, paper and so on. Digi is sometimes the better way to go…. but unlike digital scrapbooking files, you always have the option of cutting them out on your personal cutter as well!!

Cub Scout Plaques

I am a volunteer with Cub Scouts. I am a den leader for the Bears this year. Yeah!! So proud of last years 13 boys and hope they come back again this year.
I have made plaques for our leaders and this last week two exiting leaders of the troop received my plaques as a thank you for their service. I just wanted to share because I thought they came out pretty nice.
If you like to cut paper, vinyl etc and have a local cub scout group or any parent volunteer ogranization near you. I am sure they would take any help volunteering for signs, plaques etc. Cub Scouts at the Scout level is all volunteer run by their parents and is a lot of work!! But so gratifying.  Just a note for volunteerism which I believe keeps our community going. The connections we make today may be the connections that hold us together under duress or during glory.
Don’t you think they came out nice? I love them. I hope the recipients did to!

I found this frame at Wal-Mart of all places. It’s one of those plain wooden frames that you can paint however you like. I put a green coat on all three of the frames, then cut Chris’s G jumble out of vinyl and put it on the middle frame. I painted yellow over the top, let it dry, then pulled the vinyl off. Can’t wait to get back up to Wisconsin to get some more pictures to put in these frames.
